  1. Quarter fruit and place in a large covered pot; cut quarters in half if large; peel and core if no food mill, then mash when cooked.
  2. Add 4 cups filtered water or enough to cover fruit.
  3. Cover and simmer until very soft, adding water if needed to avoid burning, about 1 hour; drain excess water and save to drink.
  4. Cool fruit, then mill through a food mill using a large slotted spoon.
  5. Test sweetness; if needed, return to pan on low heat.
  6. Sweeten with sugar to taste and cook until sugar melts.
  7. Retest sweetness and adjust if necessary.
  8. Cool at room temperature.
  9. Spoon into storage containers.
  10. Seal and refrigerate or freeze; leave room at top if freezing.
