Apple or pear puree

Ingredients
- 6 lb/3 kg apples or pears
- Filtered water
- Pure cane sugar
Directions
- Quarter fruit and place in a large covered pot; cut quarters in half if large; peel and core if no food mill, then mash when cooked.
- Add 4 cups filtered water or enough to cover fruit.
- Cover and simmer until very soft, adding water if needed to avoid burning, about 1 hour; drain excess water and save to drink.
- Cool fruit, then mill through a food mill using a large slotted spoon.
- Test sweetness; if needed, return to pan on low heat.
- Sweeten with sugar to taste and cook until sugar melts.
- Retest sweetness and adjust if necessary.
- Cool at room temperature.
- Spoon into storage containers.
- Seal and refrigerate or freeze; leave room at top if freezing.
