Ingredients
- 2 small or 1 large potato
- 5 eggs, pasture-raised
- 2 Tbsp whole milk
- 4 oz/120 g hard cheese (animal rennet), grated or cubed
- 1 tsp pickling salt
- 2 strips bacon (optional)
Directions
- Preheat oven to 350F/180C.
- Peel and dice potato, boil until tender, then drain.
- Cook bacon in a large frying pan until crisp, then crumble and set aside.
- Whisk eggs, milk, and salt in a medium bowl.
- Stir in cheese, cooked potato, and bacon into egg mixture.
- Pour mixture into an oven-proof frying pan.
- Bake for 10 minutes or until eggs are set.
