Brazilian shrimp stew

Ingredients
- 1/4 cup (or more) sweet onion, chopped
- 1/4 cup roasted bell peppers, chopped
- 1/4 cup unrefined coconut oil
- 1 tsp salt (plus more to taste)
- 1 large clove garlic, chopped
- 1 lb wild-caught shrimp, peeled and deveined
- 1 1/4 cups fresh or canned tomatoes, chopped
- 2 tbsp Sriracha
- 1/2 cup half & half
- 1/2 cup heavy cream
- 1/4 cup fresh cilantro, chopped
- 1-2 tbsp fresh lime juice
Directions
- Chop sweet onion, roasted bell peppers, and garlic.
- In a heavy soup pot, melt 1/4 cup unrefined coconut oil over medium-high heat.
- Add onions and 1 tsp salt; cook until slightly browned.
- Stir in peppers and garlic; cook for 2 minutes.
- Add shrimp, tomatoes, Sriracha, half & half, cream, cilantro, and 1-2 tbsp lime juice.
- Cook until shrimp are just cooked, 5-7 minutes.
- Taste, adjust salt, and serve immediately.
