  1. Chop sweet onion, roasted bell peppers, and garlic.
  2. In a heavy soup pot, melt 1/4 cup unrefined coconut oil over medium-high heat.
  3. Add onions and 1 tsp salt; cook until slightly browned.
  4. Stir in peppers and garlic; cook for 2 minutes.
  5. Add shrimp, tomatoes, Sriracha, half & half, cream, cilantro, and 1-2 tbsp lime juice.
  6. Cook until shrimp are just cooked, 5-7 minutes.
  7. Taste, adjust salt, and serve immediately.
