Calves liver gravy

Ingredients
- 2-4 oz/60-110 g calves liver
- 3 Tbsp butter
- 1-2 cups homemade beef broth
- 1-2 Tbsp gelatin (optional)
- Few well-cooked, chopped mushrooms (optional)
Directions
- Melt 3 Tbsp butter in frying pan until sizzling hot.
- Cook liver 2-3 minutes per side, keep slightly rare.
- Remove liver, pour off butter, keep brown bits.
- Add broth slowly, stir in brown bits.
- Reduce broth until gravy thickens.
- Add more broth as needed.
- Stir in 1 Tbsp butter at end.
- Optionally, thicken with 1-2 Tbsp bloomed gelatin.
- Optionally, add chopped mushrooms.
