Calves liver gravy

Directions

  1. Melt 3 Tbsp butter in frying pan until sizzling hot.
  2. Cook liver 2-3 minutes per side, keep slightly rare.
  3. Remove liver, pour off butter, keep brown bits.
  4. Add broth slowly, stir in brown bits.
  5. Reduce broth until gravy thickens.
  6. Add more broth as needed.
  7. Stir in 1 Tbsp butter at end.
  8. Optionally, thicken with 1-2 Tbsp bloomed gelatin.
  9. Optionally, add chopped mushrooms.
