Candied Ginger

Ray never recommended ginger, can be allergenic for some, only eat if you know you can handle it.

Ingredients
- 1 cup fresh ginger, peeled and sliced
- 1 cup sugar
- 2 cups water
Directions
- Boil peeled ginger in 2 cups of water for 30 minutes, then drain.
- In the same pot, combine 1 cup sugar with 1 cup water. Heat until dissolved.
- Return the ginger to the syrup and simmer for 20 minutes, stirring until translucent. (You can save the liquid for syrup.)
- Remove ginger slices and spread on a rack to dry for an hour.
- Toss with extra sugar for coating.
