Candied Ginger

Ray never recommended ginger, can be allergenic for some, only eat if you know you can handle it.

Ingredients

Directions

  1. Boil peeled ginger in 2 cups of water for 30 minutes, then drain.
  2. In the same pot, combine 1 cup sugar with 1 cup water. Heat until dissolved.
  3. Return the ginger to the syrup and simmer for 20 minutes, stirring until translucent. (You can save the liquid for syrup.)
  4. Remove ginger slices and spread on a rack to dry for an hour.
  5. Toss with extra sugar for coating.
