  1. Melt coconut oil and blend with dates until smooth.
  2. Whisk eggs and mix with the blended mixture.
  3. Grate carrots and set aside.
  4. Combine all dry ingredients in a bowl.
  5. Mix everything together until well combined.
  6. Pour into a greased baking pan.
  7. Bake at 180°C for 30-35 minutes.
  8. Beat frosting ingredients until smooth.
  9. Let cake cool before frosting.
