Chicharrones pork rinds

Ingredients
- Store-bought pork rinds (already cooked)
- Coconut oil
Directions
- Preheat oven to 200°F (100°C).
- Fill a medium frying pan halfway with coconut oil.
- Heat oil to 120°F (50°C), then reduce to low heat.
- Break up pork rinds and add to oil, ensuring they’re covered.
- Place a small lid inside the pan on top of the rinds.
- Cook on low for 20 min with the lid on.
- Turn off heat, remove rinds, and drain on paper towels.
- Place rinds on fresh paper towels on a cookie sheet and bake for a few minutes to remove excess oil.
