Chilled cooked pear sauce

Ingredients
- 4 medium pears
- 2 cups filtered water (1 cup initial + enough to cover)
- 2 tbsp lemon juice
- Zest of 1 lemon
- 1/2 cup sugar (adjust to taste)
- Fresh nutmeg (to taste, optional)
Directions
- Peel and thinly slice 4 pears.
- In a glass bowl, mix 1 cup water with 2 tbsp lemon juice.
- Add pear slices to lemon water, toss to coat, then cover with more water to submerge.
- Cover bowl and soak in refrigerator for 10-12 hours.
- Transfer pears and soaking water to a non-metallic pot.
- Add lemon zest and fresh nutmeg.
- Bring to a boil on medium heat, then add 1/2 cup sugar (adjust to taste).
- Cook for 30 minutes until pears soften.
- Mash with a potato masher or blend for smoother texture.
- Cool uncovered to thicken, then chill before serving.
