  1. Peel and thinly slice 4 pears.
  2. In a glass bowl, mix 1 cup water with 2 tbsp lemon juice.
  3. Add pear slices to lemon water, toss to coat, then cover with more water to submerge.
  4. Cover bowl and soak in refrigerator for 10-12 hours.
  5. Transfer pears and soaking water to a non-metallic pot.
  6. Add lemon zest and fresh nutmeg.
  7. Bring to a boil on medium heat, then add 1/2 cup sugar (adjust to taste).
  8. Cook for 30 minutes until pears soften.
  9. Mash with a potato masher or blend for smoother texture.
  10. Cool uncovered to thicken, then chill before serving.
