Chocolate Casein Brownies

  1. Preheat oven to 350°F (180°C). Line a 12x8 inch (30x20 cm) baking dish with buttered baking paper.
  2. Over a water bath or in a microwave-safe bowl, melt chocolate chips with coconut oil, stirring until smooth.
  3. Pour mixture into a large mixing bowl, add eggs, sugar, and casein. Mix well until fully incorporated (electric beater works best).
  4. Pour into lined baking dish and bake for 18 minutes, until a fork comes out clean. Do not overcook.
  5. Remove from oven, allow to cool, then slice and transfer to a wire rack.

Brownies keep up to 5 days in the fridge and freeze well.
