Ingredients
- 3 tbsp unsalted butter
- 6 oz semisweet chocolate
- 3 large eggs (separated)
- 1/3 tbsp sugar
- 1/2 cup cold heavy cream
- 1/2 tsp vanilla extract
- (optional) coffee, chocolate shavings for decoration
Directions
- Melt butter and chocolate, then whisk in egg yolks. Set aside.
- Beat egg whites with cream of tartar and sugar until stiff peaks form. Fold into chocolate mixture.
- In another bowl, whip cold heavy cream with sugar and vanilla until medium peaks form. Fold into chocolate mixture.
- Divide mousse into 6 glasses, cover, and chill for at least 2 hours.
- Whip cold heavy cream with sugar to medium peaks. Top mousse with whipped cream and chocolate shavings before serving.
Mousse can be made up to 1 day ahead. Cover and refrigerate. Add whipped cream and chocolate shavings a few hours before serving.
