Chocolate mousse

  1. Melt butter and chocolate, then whisk in egg yolks. Set aside.
  2. Beat egg whites with cream of tartar and sugar until stiff peaks form. Fold into chocolate mixture.
  3. In another bowl, whip cold heavy cream with sugar and vanilla until medium peaks form. Fold into chocolate mixture.
  4. Divide mousse into 6 glasses, cover, and chill for at least 2 hours.
  5. Whip cold heavy cream with sugar to medium peaks. Top mousse with whipped cream and chocolate shavings before serving.

Mousse can be made up to 1 day ahead. Cover and refrigerate. Add whipped cream and chocolate shavings a few hours before serving.
