Chocolate ricotta mousse

Ingredients
- 2 cups ricotta cheese
- 2 tsp pure cane sugar
- ½ cup (4 oz) semisweet chocolate, melted
Directions
- Melt chocolate in a small pot or saucepan over low to medium heat, stirring to prevent burning.
- Blend ricotta cheese, sugar, and melted chocolate thoroughly.
- Scoop mixture into 4-6 ramekins.
- Cover and refrigerate until chilled.
