Coconut oil mayonnaise

Ingredients
- 1 whole egg, (room temperature)
- 1 egg yolk (room temperature)
- 1 tsp of mustard
- 1,5 tbsp of fresh lemon juice
- 3/4 cup of coconut oil, melted
- pinch of salt and pepper
Directions
- Blend egg, yolk, mustard, and lemon juice until smooth.
- Slowly pour in coconut oil with the motor running.
- Add salt and pepper, mix well.
- Cover and leave at room temperature for 7 hours before refrigerating.
