Coconut pineapple pannacotta

(Coconut can be allergenic for some, proceed if know you can digest it well)

For topping:

Directions

  1. Mix gelatin and 2 dl coconut milk; let it soak for 10 minutes.
  2. In a saucepan, mix coconut cream with 1 dl coconut milk and vanilla.
  3. Heat the mixture on the stove.
  4. Add the soaked gelatin and coconut milk into the saucepan.
  5. Bring the mixture to a boil while whisking well.
  6. Remove from the stove, add sugar and salt.
  7. Pour the mixture into serving-size glasses/cups.
  8. Let it cool in the fridge for 2-4 hours.

Topping

  1. In a saucepan, heat up chopped pineapple, sugar, and water.
  2. Let it boil for 10 minutes.
  3. Set aside and top over pannacotta for serving.
