(Coconut can be allergenic for some, proceed if know you can digest it well)
Ingredients
- 3 dl coconut milk
- 3 dl coconut cream
- 1,5 tablespoon grass-fed gelatin powder
- 2 tablespoons white sugars
- Vanilla (to taste)
- Pinch of salt
For topping:
- Pineapple, chopped
- 1 tablespoon sugar
- 1 dl water
Directions
- Mix gelatin and 2 dl coconut milk; let it soak for 10 minutes.
- In a saucepan, mix coconut cream with 1 dl coconut milk and vanilla.
- Heat the mixture on the stove.
- Add the soaked gelatin and coconut milk into the saucepan.
- Bring the mixture to a boil while whisking well.
- Remove from the stove, add sugar and salt.
- Pour the mixture into serving-size glasses/cups.
- Let it cool in the fridge for 2-4 hours.
Topping
- In a saucepan, heat up chopped pineapple, sugar, and water.
- Let it boil for 10 minutes.
- Set aside and top over pannacotta for serving.
