Codfish cakes

  1. Peel, chop, and boil potatoes until well done.
  2. Beat eggs in a small bowl.
  3. Cook codfish in butter until done, using a baking dish or frying pan.
  4. Mash cooked potatoes.
  5. Cool fish and potatoes.
  6. Mix codfish, potatoes, 1 Tbsp butter, Parmesan, and eggs in a large bowl.
  7. Form mixture into 1.5-2 inch patties.
  8. Sauté patties in butter in a large frying pan until golden brown.
