Codfish cakes

Ingredients
- 1 lb/500 g codfish filets, boneless
- 2 medium potatoes
- 1 Tbsp butter
- Butter for cooking (as needed)
- 0.5 cup grated Parmesan cheese
- 2 pastured eggs
- Pickling salt to taste
Directions
- Peel, chop, and boil potatoes until well done.
- Beat eggs in a small bowl.
- Cook codfish in butter until done, using a baking dish or frying pan.
- Mash cooked potatoes.
- Cool fish and potatoes.
- Mix codfish, potatoes, 1 Tbsp butter, Parmesan, and eggs in a large bowl.
- Form mixture into 1.5-2 inch patties.
- Sauté patties in butter in a large frying pan until golden brown.
