Coffee marshmallows

Ingredients
- 50 g beef gelatin
- 150 g sugar, honey, or maple syrup
- 3 tsp instant coffee
- 1–2 pinches salt
- 1/2 cup water (for gelatin)
- 1/2 cup water (for syrup)
- Coconut oil (for greasing)
Directions
- Combine gelatin and 1/2 cup water in a bowl. Whisk for 30 seconds, then set aside to bloom.
- In a small pot, mix sugar, coffee, salt, and 1/2 cup water.
- Heat over medium, stirring occasionally, until steaming.
- Tear the bloomed gelatin into smaller pieces.
- Pour 1/3 of the hot syrup into the gelatin and mix with an electric whisk.
- Whisk on low until smooth, about a minute.
- Increase speed to high, gradually adding the remaining syrup. Whisk until the mixture triples in volume.
- Quickly transfer to a greased container before it sets.
- Refrigerate for at least 2 hours, then cut into pieces and enjoy.
