  1. Combine gelatin and 1/2 cup water in a bowl. Whisk for 30 seconds, then set aside to bloom.
  2. In a small pot, mix sugar, coffee, salt, and 1/2 cup water.
  3. Heat over medium, stirring occasionally, until steaming.
  4. Tear the bloomed gelatin into smaller pieces.
  5. Pour 1/3 of the hot syrup into the gelatin and mix with an electric whisk.
  6. Whisk on low until smooth, about a minute.
  7. Increase speed to high, gradually adding the remaining syrup. Whisk until the mixture triples in volume.
  8. Quickly transfer to a greased container before it sets.
  9. Refrigerate for at least 2 hours, then cut into pieces and enjoy.
