Crispy smashed new potatoes with salsa & sour cream

  1. Scrub new potatoes and boil in a pot of water on medium-high heat for 20 minutes.
  2. Drain potatoes and let cool slightly.
  3. Preheat oven to 400°F and line a baking sheet with parchment paper.
  4. Place cooled potatoes on the sheet and smash each with a spatula until flat, reattaching loose pieces.
  5. Sprinkle salt and add a dollop of beef tallow on each potato.
  6. Bake for 10 minutes, then flip potatoes.
  7. Bake another 5 minutes until golden.
  8. Serve topped with salsa and sour cream.
