Crispy smashed new potatoes with salsa & sour cream

Ingredients
- 1 lb tiny new potatoes (whole, with skins)
- Salt (to taste)
- 2-3 tbsp beef tallow
- Salsa (to taste)
- Sour cream (to taste)
Directions
- Scrub new potatoes and boil in a pot of water on medium-high heat for 20 minutes.
- Drain potatoes and let cool slightly.
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Place cooled potatoes on the sheet and smash each with a spatula until flat, reattaching loose pieces.
- Sprinkle salt and add a dollop of beef tallow on each potato.
- Bake for 10 minutes, then flip potatoes.
- Bake another 5 minutes until golden.
- Serve topped with salsa and sour cream.
