Crustless baked cheesecake

  1. Preheat oven to 325°F, grease 9-inch baking dish with coconut oil.
  2. Whip cream cheese until light and fluffy.
  3. Add eggs one at a time, beating well after each.
  4. Mix in ½ cup sugar and ½ tsp vanilla extract.
  5. Pour batter into baking dish.
  6. Bake for 40 min or until lightly browned, then cool.
  7. Blend sour cream, 1 tsp vanilla, and 3 Tbsp sugar with mixer.
  8. Spread topping over cheesecake, leaving ½-inch edge.
  9. Chill in fridge for at least 4 hr, preferably overnight.
