  1. Hard-boil eggs (see PERFECT BOILED EGGS recipe) and chill in fridge.
  2. Cut chilled eggs in half lengthwise.
  3. Scoop out yolks into a medium bowl.
  4. Arrange egg whites on a serving platter.
  5. Mash yolks with a fork or masher.
  6. Mix in butter, olive oil, and vinegar to form a paste.
  7. Spoon about 1 Tbsp yolk mixture back into each egg white.
  8. Serve immediately.
