Deviled eggs

Ingredients
- 12 pasture-raised eggs
- 4 Tbsp melted butter
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
Directions
- Hard-boil eggs (see PERFECT BOILED EGGS recipe) and chill in fridge.
- Cut chilled eggs in half lengthwise.
- Scoop out yolks into a medium bowl.
- Arrange egg whites on a serving platter.
- Mash yolks with a fork or masher.
- Mix in butter, olive oil, and vinegar to form a paste.
- Spoon about 1 Tbsp yolk mixture back into each egg white.
- Serve immediately.
