Ingredients
- 2 Tbsp high-quality non-hydrolyzed gelatin powder
- 2 cups milk
- 2 pasture-raised eggs, separated
- 2 tsp pure vanilla extract
- 4 Tbsp pure cane sugar
Directions
- Bloom gelatin by soaking in milk for 10-15 min in a medium saucepan until gelled.
- Beat egg yolks with 2 Tbsp sugar using an electric mixer on low/medium speed until well mixed.
- Beat egg whites with 2 Tbsp sugar in a separate bowl on medium/high speed until fluffy peaks form.
- Warm gelatin/milk mixture on medium heat, stirring frequently, until gelatin dissolves.
- Temper egg yolks by adding 2-3 Tbsp warm gelatin/milk mixture, then mix well.
- Add vanilla extract to tempered egg yolks.
- Combine tempered egg yolk mixture with remaining gelatin/milk mixture and heat to boiling, stirring constantly.
- Remove from heat.
- Fold beaten egg whites into gelatin mixture.
- Pour into a dish and refrigerate for up to 3 hr until set.
