  1. Bloom gelatin by soaking in milk for 10-15 min in a medium saucepan until gelled.
  2. Beat egg yolks with 2 Tbsp sugar using an electric mixer on low/medium speed until well mixed.
  3. Beat egg whites with 2 Tbsp sugar in a separate bowl on medium/high speed until fluffy peaks form.
  4. Warm gelatin/milk mixture on medium heat, stirring frequently, until gelatin dissolves.
  5. Temper egg yolks by adding 2-3 Tbsp warm gelatin/milk mixture, then mix well.
  6. Add vanilla extract to tempered egg yolks.
  7. Combine tempered egg yolk mixture with remaining gelatin/milk mixture and heat to boiling, stirring constantly.
  8. Remove from heat.
  9. Fold beaten egg whites into gelatin mixture.
  10. Pour into a dish and refrigerate for up to 3 hr until set.
