  1. Dissolve a few tsp baking soda in water, wash fruit, and rinse.
  2. Select several pieces of ripe fruit (use a dozen for larger batches).
  3. Bring several quarts of water to a boil, enough to cover fruit.
  4. Carefully place fruit in boiling water and boil for 1-2 min.
  5. Remove fruit with a slotted spoon.
  6. Peel, core, and deseed fruit.
  7. Slice fruit and measure cups.
  8. Place fruit in a large pot over medium heat with a little water to prevent sticking.
  9. Add 1-2 tsp sugar per cup of fruit, adjusting for sweetness.
  10. Cook for ~1 hr until well-cooked, adding water if needed, and mash or blend lightly.
  11. Cool mixture.
