  1. Peel, core, and chop 4 medium apples into 1/2-inch pieces.
  2. In a large skillet, melt 2 tbsp unsalted butter over medium heat.
  3. Add the chopped apples to the skillet, stirring to coat them in butter.
  4. Sprinkle 3 tbsp granulated sugar and 1 tsp Ceylon cinnamon over the apples.
  5. Cook, stirring occasionally, for 10-15 minutes, until the apples are tender and golden, and the sugar forms a light syrup.
  6. Optionally, add 1 tbsp lemon juice during the last minute of cooking for brightness and to prevent browning.
  7. Remove from heat and let cool slightly before serving as a dessert or side dish.
