Ingredients
- 1 lb of oysters
- 1 buttermilk (enough to submerge oysters. Can use a cup of milk&tbsp white vinegar if no buttermilk)
- 1 cup masa harina
- 1 tbsp garlic powder
- 3 tsp of baking powder
- cayenne/paprika/pickling salt/pepper (optional)
Directions
- Strain oysters, soak in buttermilk
- Coat in a mix of masa and spices
- Fry in refined coconut oil at 350F until nice and brown, 2min per batch (volume of a fist), 15min per pound
- Put on wire rack
