Ganache pudding

  1. Separate the coconut cream from the coconut water by leaving the can overnight in the fridge.
  2. Remove the cream with a spoon, save the water
  3. Add 2 (or more to taste) tbsp of sugar
  4. Add 3 tbsp of cacao and mix a little — it will be hard to mix at this point, and will be very dry
  5. To make the final consistency we want, begin adding the coconut water to the mix — in this case I used only half (~100mL) of the remaining water in the can.
  6. Slowly add and mix. You will be able to tune the final consistency with the amount of coconut water.
