Ingredients
- 1 cup masa flour (un-enriched Goya Masarica or King Arthur are good)
- 1/2 cup refined coconut oil
- 1/2 cup sugar
- 1 egg
- 30 grams micellar casein (Naked brand is good)
- 20 grams gelatin (Great lakes is good)
- Water
- Salt (optional)
- Baking soda (optional)
Directions
- Add 1 cup of masa to your mixing bowl.
- Heat 1/2 cup of coconut oil on the stove until warm, then add 1/2 cup sugar. Mix to create a warm mixture.
- Pour the warm coconut oil + sugar into the masa and mix with a spoon.
- Once masa + coconut oil + sugar is mixed, add an egg and mix.
- Add two scoops of casein (30 grams) to the mixture.
- Dissolve 20 grams of gelatin in 1/2 cup of boiled water. Pour the hot gelatin into the mix; it’s okay if there’s a small undissolved clump.
- Add salt and baking soda if desired.
- Mix everything thoroughly and pour into a shallow pan.
- Bake at 350°F for 30 to 45 minutes.
