Lavender goat cheese cheesecake

  1. Preheat oven to 350°F (175°C).
  2. Mix goat cheese, cream cheese, lavender flowers, and lemon zest.
  3. Combine 1 cup of this mixture with egg, honey (or sugar), and salt. Beat until fluffy.
  4. Grease 6 medium muffin tins with coconut oil and butter.
  5. Divide batter among tins and bake for 17 minutes.
  6. Mix crème fraiche (or sour cream) with sugar and vanilla extract.
  7. Remove cheesecakes, let sit 5 minutes. Increase oven to 400°F (200°C).
  8. Depress centers, add crème fraiche mixture, and bake 3 minutes.
  9. Cool completely, chill for several hours.
  10. Remove carefully. Serve with fresh berries and raspberry sauce.
