Ingredients
- 2-3 tbsp lemon juice
- 1 tbsp gelatin powder (2 if you want a firm set)
- 2 cups berries (for bigger berries, chop first)
- 2/3 cup honey or 1 cup white sugar
- pinch or two of pickling salt
Directions
- In a small bowl, bloom gelatin in lemon juice.
- After 5-10 min add gelatin to a small pot on the stove.
- In the same small pot, mash the berries and honey with salt, heat to a boil, stirring frequently to avoid burning the mixture.
- Maintain at steady boil until thickened (about 15 min).
- Let cool off heat for 5-10 min.
- Pour your jam into glass jar (be sure to run your jar under hot water for a few minutes before adding the jam).
- Cover with lid and set in fridge.
