Italian Hot Chocolate

Ingredients
- 1/2 teaspoon powdered gelatin (If you want it even thicker, increase gelatin to 3/4 teaspoon)
- 2 tablespoons cold water
- 1 cup whole milk
- 1/4 cup heavy cream
- 2 tablespoons cocoa powder
- 2.5 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 4 oz high-quality chocolate (60–70%)
Directions
- In a small bowl, sprinkle the gelatin over the cold water. Let bloom for 5 minutes.
- In a saucepan, whisk together the cocoa powder, sugar, and salt. Slowly add milk and cream, whisking until smooth.
- Bring mixture just to a boil, then reduce heat to medium. Stir in vanilla.
- Remove from heat briefly and whisk in the bloomed gelatin until dissolved.
- Return to low heat, add the chopped chocolate, and stir until fully melted and the drink is smooth and thick.
- Pour into mugs and enjoy while hot.
