  1. In a small bowl, sprinkle the gelatin over the cold water. Let bloom for 5 minutes.
  2. In a saucepan, whisk together the cocoa powder, sugar, and salt. Slowly add milk and cream, whisking until smooth.
  3. Bring mixture just to a boil, then reduce heat to medium. Stir in vanilla.
  4. Remove from heat briefly and whisk in the bloomed gelatin until dissolved.
  5. Return to low heat, add the chopped chocolate, and stir until fully melted and the drink is smooth and thick.
  6. Pour into mugs and enjoy while hot.
