Lemon gummy squares

Ingredients
- 1 cup filtered or purified water
- ½ cup high-quality non-hydrolyzed gelatin powder
- 1 cup pure cane sugar
- ¼ cup sweet orange juice
- Juice of ½ lemon
Directions
- Bloom gelatin by mixing 1 cup water with ½ cup gelatin in a glass bowl; let sit for 15 min until thickened.
- Juice half a lemon and set aside.
- Melt sugar in a saucepan with ¼ cup orange juice over gentle heat until clear.
- Add bloomed gelatin to the saucepan, reduce heat to medium, and stir until combined.
- Stir in lemon juice.
- Wet a 9x12” (23x30cm) glass dish with water.
- Pour mixture into the dish.
- Refrigerate for 12 hr until firm.
- Remove from dish and cut into squares; optionally coat with granulated sugar to reduce stickiness.
