  1. Bloom gelatin by mixing 1 cup water with ½ cup gelatin in a glass bowl; let sit for 15 min until thickened.
  2. Juice half a lemon and set aside.
  3. Melt sugar in a saucepan with ¼ cup orange juice over gentle heat until clear.
  4. Add bloomed gelatin to the saucepan, reduce heat to medium, and stir until combined.
  5. Stir in lemon juice.
  6. Wet a 9x12” (23x30cm) glass dish with water.
  7. Pour mixture into the dish.
  8. Refrigerate for 12 hr until firm.
  9. Remove from dish and cut into squares; optionally coat with granulated sugar to reduce stickiness.
