Low PUFA Baked Chicken Breast

Ingredients
- 1 chicken breast
- salt (to taste)
- butter (or any predominantly saturated fat, for frying)
- dry rub with preferred spices (optional)
Directions
- Preheat oven to 235°C, place an oven sheet at the bottom with parchment paper and an oven rack in the middle.
- Pound chicken breast into fillets.
- Stab the fillets all over with a fork on both sides.
- Apply salt and dry rub to both sides.
- Place the fillets on the oven rack and bake for 20-25 minutes or until the tips of the fillets are slightly burned.
- Rest the fillets for 10 minutes.
- Slice the fillets into strips.
- Fry the chicken strips in butter.
- Eat as is or use the chicken for other dishes.
