Low(er) PUFA Bacon

Ingredients
- Pastured bacon (preferred, but not required)
- Coconut oil (a few tablespoons)
Directions
- Preheat oven to 400Β°F (200Β°C).
- Arrange bacon in a glass baking dish.
- Bake for 8-10 minutes, then drain the fat.
- Spread coconut oil in the dish, place bacon back in.
- Cook another 8-10 minutes or until crispy.
- Transfer to a paper towel to cool, then serve.
