Mandarin & cara cara orange marmalade

Ingredients
- 3 medium to large oranges (e.g., 2 Cara Cara + 2 mandarins)
- 4 cups filtered water
- 2-3 cups sugar
Directions
- Slice 3 oranges thinly, then cut slices across the diameter.
- Transfer orange slices to a bowl with 4 cups filtered water.
- Cover and refrigerate for 24 hours to soak.
- Pour soaked oranges and water into a non-reactive pot.
- Cook uncovered on medium to medium-high heat for 30 minutes.
- Add 2-3 cups sugar, depending on orange sweetness.
- Cook for another 30 minutes, stirring occasionally, until thickened.
- Cool and store in the refrigerator or can for longer storage.
