Maple marshmallows

Ingredients
- 2/3 cup maple syrup
- 1.3 cups filtered water
- 1/4 cup gelatin
- Vanilla extract, ceylon cinamon (optional)
Directions
- Sprinkle gelatin over 1/2 cup of water in a large bowl and let bloom.
- Heat the remaining 2/3 cup water with maple syrup in a saucepan until boiling, then simmer for 5 minutes.
- Pour the hot syrup mixture into the bloomed gelatin.
- Add vanilla extract if using.
- Whip with a stand mixer or electric whisk on high speed until fluffy peaks form (about 5 minutes).
- Spread into a parchment-lined glass dish and refrigerate for a few hours until set.
- Cut into squares and enjoy in coffee, warm milk, or as a snack.
Caution: Let the syrup cool slightly before mixing to avoid splashes.
