  1. Sprinkle gelatin over 1/2 cup of water in a large bowl and let bloom.
  2. Heat the remaining 2/3 cup water with maple syrup in a saucepan until boiling, then simmer for 5 minutes.
  3. Pour the hot syrup mixture into the bloomed gelatin.
  4. Add vanilla extract if using.
  5. Whip with a stand mixer or electric whisk on high speed until fluffy peaks form (about 5 minutes).
  6. Spread into a parchment-lined glass dish and refrigerate for a few hours until set.
  7. Cut into squares and enjoy in coffee, warm milk, or as a snack.

Caution: Let the syrup cool slightly before mixing to avoid splashes.
