  1. Bloom gelatin by mixing ½ cup cool water with 2½ Tbsp gelatin in a large bowl; let sit 10 min until jello-like.
  2. In a saucepan, combine ½ cup cool water and 2 cups sugar; stir well.
  3. Attach a candy thermometer to the saucepan, slightly raised from the bottom.
  4. Boil sugar mixture gently until it reaches 220°F.
  5. Pour hot sugar mix into the gelatin, beating with a mixer on low then high for 5 min until fluffy with air pockets.
  6. Check batter consistency; it should ooze off the beater, not run.
  7. Pour into a 9x13 inch glass dish greased with coconut oil and dusted with powdered sugar.
  8. Cover with a cloth and let set for up to 12 hr.
  9. Cut into squares with a pizza cutter and lightly dust with powdered sugar.
