Mimi's marshmallows

Ingredients
- 2½ Tbsp high-quality non-hydrolyzed gelatin powder
- ½ cup cool filtered water (for blooming)
- 2 cups pure cane sugar
- ½ cup cool purified or filtered water (for sugar mix)
- Coconut oil, for greasing
- Powdered sugar, for dusting
Directions
- Bloom gelatin by mixing ½ cup cool water with 2½ Tbsp gelatin in a large bowl; let sit 10 min until jello-like.
- In a saucepan, combine ½ cup cool water and 2 cups sugar; stir well.
- Attach a candy thermometer to the saucepan, slightly raised from the bottom.
- Boil sugar mixture gently until it reaches 220°F.
- Pour hot sugar mix into the gelatin, beating with a mixer on low then high for 5 min until fluffy with air pockets.
- Check batter consistency; it should ooze off the beater, not run.
- Pour into a 9x13 inch glass dish greased with coconut oil and dusted with powdered sugar.
- Cover with a cloth and let set for up to 12 hr.
- Cut into squares with a pizza cutter and lightly dust with powdered sugar.
