Molten chocolate cake

Ingredients
- 1/2 cup (4 oz) unsalted butter, cubed, plus extra for greasing
- 2 tbsp masa, plus more for dusting
- 6 oz bittersweet chocolate (66% cacao), chopped
- 2 large eggs, room temperature
- 2 large egg yolks, room temperature
- 1/4 cup granulated sugar
- 1/4 tsp pickling salt
Directions
- Preheat oven to 450°F/230C°. Grease four 6-oz ramekins with butter, dust lightly with flour, tap out excess. Place on a baking sheet.
- Fill saucepan with 1 inch of water and bring to a gentle simmer. Place butter and chocolate in a heatproof bowl and set over the pan, ensuring the bowl does not touch the water. Stir occasionally until melted and smooth. Remove from heat.
- In a medium bowl, beat eggs, yolks, sugar, and salt with a mixer on high speed until pale and thick, about 2-3 minutes.
- Stir melted chocolate mixture until fully smooth.
- Gently fold the chocolate and flour into the egg mixture until fully incorporated.
- Divide batter evenly among ramekins (about 1/2 cup each) and smooth the tops. Bake for 9-12 minutes until the edges are set but centers remain soft.
- Let cool for 1 minute. Invert each ramekin onto a dessert plate, let stand for 10 seconds, then lift ramekin off.
- Serve immediately and enjoy!
