  1. Preheat oven to 350°F (175°C). Line and grease parchment on baking sheets.
  2. Prepare homemade marshmallows ahead of time.
  3. Blend cane sugar in a blender or food processor until powdered.
  4. In a bowl, mix sugar, cocoa powder, salt, egg whites, and vanilla with a hand mixer until thick (not runny).
  5. Fold in chocolate chips and marshmallows.
  6. Chill dough 10–20 min to firm up.
  7. Spoon onto baking sheet and bake 12 min.
