Montreal Meltaway Delights

Ingredients
- 3 cups cane sugar
- 2/3 cup cacao powder
- Light sprinkle of Pickling salt
- 3–4 egg whites (enough to keep dough thick)
- 1 1/2 tsp Madagascar vanilla extract
- 1/2 cup chopped homemade marshmallows
- ~1 cup semi-sweet mini chocolate chips (soy-free)
Directions
- Preheat oven to 350°F (175°C). Line and grease parchment on baking sheets.
- Prepare homemade marshmallows ahead of time.
- Blend cane sugar in a blender or food processor until powdered.
- In a bowl, mix sugar, cocoa powder, salt, egg whites, and vanilla with a hand mixer until thick (not runny).
- Fold in chocolate chips and marshmallows.
- Chill dough 10–20 min to firm up.
- Spoon onto baking sheet and bake 12 min.
