Nixtamalized tortilla with cheese and mushrooms

  1. Soak 2 nixtamalized tortillas in water for 5 minutes, then lightly pat dry with a paper towel.
  2. Grate 2 oz hard cheese and sprinkle evenly over the tortillas.
  3. Top with ½ cup cooked mushrooms and optional small amount of raw or cooked carrot.
  4. Sprinkle with a pinch of pickling salt.
  5. Bake in a toaster oven or convection oven at 350°F for 5 minutes or until cheese melts.
  6. Serve warm.
