Oat brownies with orange peel & macadamias

Ingredients
- 1 cup butter
- 3-4 oz unsweetened chocolate squares
- 2 cups sugar
- 4 eggs, beaten
- 1 cup oat flour
- 1 tsp vanilla extract
- Zest of 2 organic oranges
- 1 tsp flaky finishing salt
- 1 cup macadamias, chopped
Directions
- Preheat oven to 325°F.
- Over a double boiler (or smaller pot inside a larger pot with water halfway up), melt 1 cup butter and 3-4 oz unsweetened chocolate together.
- Remove from heat, add 2 cups sugar, and cool for 5 minutes.
- Stir in 4 beaten eggs.
- Add 1 cup oat flour, 1 tsp vanilla extract, zest of 2 oranges, 1 tsp flaky finishing salt, and 1 cup chopped macadamias.
- Butter a baking pan (glass for moist brownies, metal for chewy edges).
- Pour batter into the pan and bake for 40-45 minutes.
- Cool and cut into 12 pieces.
