Oat brownies with orange peel & macadamias

  1. Preheat oven to 325°F.
  2. Over a double boiler (or smaller pot inside a larger pot with water halfway up), melt 1 cup butter and 3-4 oz unsweetened chocolate together.
  3. Remove from heat, add 2 cups sugar, and cool for 5 minutes.
  4. Stir in 4 beaten eggs.
  5. Add 1 cup oat flour, 1 tsp vanilla extract, zest of 2 oranges, 1 tsp flaky finishing salt, and 1 cup chopped macadamias.
  6. Butter a baking pan (glass for moist brownies, metal for chewy edges).
  7. Pour batter into the pan and bake for 40-45 minutes.
  8. Cool and cut into 12 pieces.
