Olive oil mayonnaise

Ingredients
- 1 egg yolk
- 1 tbsp fresh lemon juice
- 1 tbsp water
- 1 tsp Dijon mustard
- 1 cup olive oil
- Pickling salt, to taste
Directions
- In a tall, narrow jar, combine egg yolk, lemon juice, water, and mustard.
- Pour olive oil on top and let it settle briefly.
- Insert an immersion blender, touching the bottom, and start blending.
- As the mayo forms, slowly move the blender up and down until fully emulsified.
- Season with salt and store in the fridge for several weeks.
