  1. In a tall, narrow jar, combine egg yolk, lemon juice, water, and mustard.
  2. Pour olive oil on top and let it settle briefly.
  3. Insert an immersion blender, touching the bottom, and start blending.
  4. As the mayo forms, slowly move the blender up and down until fully emulsified.
  5. Season with salt and store in the fridge for several weeks.
