A raw carrot salad to support digestive, hormone and thyroid health

Ingredients
- 1-2 raw carrots, peeled in thick vertical strips and washed thoroughly
- 1-2 tsp refined coconut oil (or olive oil)
- 1 tsp white vinegar
- A pinch of pickling salt
- 2 cloves raw garlic (optional)
Directions
- Grate the carrot and rinse out under water.
- Then mix with coconut oil and vinegar, I also like to add a pinch or two of salt.
