Potato soup

Ingredients
- 1 large potato, peeled and diced
- Small amount of onion (optional)
- 2 cups homemade gelatinous chicken or beef broth
- Pinch of refined sea salt
- 1 cup whole milk
- 1 cup half and half
- 2 tbsp butter
- Coconut oil (optional)
Directions
- Chop the potato and onion into small pieces.
- Simmer in broth until the potato is soft and liquid reduces.
- Stir in milk and half and half, heating gently.
- Melt in butter and add coconut oil if desired.
- Continue heating slowly until slightly thickened, then serve.
