Roasted marrow bones with caramelized peaches

  1. Preheat oven to 400F.
  2. Place bone marrow on a baking sheet and place in oven for 15 minutes.
  3. Melt a little butter in a pan.
  4. Add the diced peaches, dates and a pinch of salt to the pan.
  5. Juice/squeeze the orange and add to the pan.
  6. Let cook until it looks like a thick slop.
  7. Add the slop on top of the bone marrow.
  8. Eat with a small spoon.
