Roasted potatoes

Ingredients
- Yukon Gold potatoes, preferably organic
- Coconut oil (92F) or beef/lamb tallow
- Pickling salt
Directions
- Preheat oven to 425 F / 220 C and heat a baking sheet inside.
- Peel potatoes and cut into ¾ inch/1.75 cm cubes.
- Bring a pot of salty water to boil and parboil potatoes for 2 minutes.
- Drain potatoes and return to empty pot to cool and dry.
- Melt enough coconut oil/tallow in a skillet to cover potatoes.
- Salt dried potatoes and fry in skillet for 5 minutes or until crispy.
- Transfer fried potatoes to hot baking sheet, spreading evenly.
- Bake for 20-25 minutes until golden brown.
