  1. Cut pepper in half, remove seeds and core, and chop pepper.
  2. Chop cucumber and tomato into bite-sized pieces.
  3. Place all chopped vegetables in a serving bowl.
  4. Drizzle with olive oil and lemon juice, sprinkle with pickling salt, and toss to combine.
  5. Add cubed mozzarella cheese and mix gently.
