  1. Preheat the oven to 400°F/200°C (assumed standard roasting temperature).
  2. Chop all vegetables into bite-sized pieces.
  3. Place all chopped vegetables in a roasting pan with a lid.
  4. Drizzle with coconut oil, sprinkle with pickling salt and pepper, and toss to coat.
  5. Roast in the oven for 10 minutes or until tender.
