Roasted vegetables

Ingredients
- 1 Yukon Gold potato
- 1 cup butternut squash
- 1 cup cooked mushrooms
- 1 cup sweet potato
- 1 cup summer or winter squashes
- Coconut oil (92°F)
- Pickling salt
- Pepper
- Optional: 1 small onion
- Optional: 3 cloves of garlic
Directions
- Preheat the oven to 400°F/200°C (assumed standard roasting temperature).
- Chop all vegetables into bite-sized pieces.
- Place all chopped vegetables in a roasting pan with a lid.
- Drizzle with coconut oil, sprinkle with pickling salt and pepper, and toss to coat.
- Roast in the oven for 10 minutes or until tender.
