Shrimp cocktail

Ingredients
- 1 lb wild-caught shrimp (peeled, shells reserved)
- Water (enough to submerge shrimp)
- Ice cubes (a few)
- 1/2 cup organic ketchup
- Zest of 1 small lemon (finely grated)
- 1/4 tsp Worcestershire sauce
- 1/2 tbsp finely grated horseradish
- Tabasco sauce (optional, to taste)
Directions
- Peel shrimp, reserving shells.
- Boil shrimp shells in just enough water to cover shrimp on medium-high heat for 20-25 minutes.
- Reduce heat to medium-low, add shrimp, and cook for 1-3 minutes based on size (tiny: 1 min, colossal: 3 min).
- Remove shrimp with a slotted spoon, transfer to a bowl, and cover with ice cubes to stop cooking.
- Refrigerate shrimp to cool further while preparing sauce.
- Mix ketchup, lemon zest, Worcestershire sauce, and horseradish in a bowl for cocktail sauce.
- Add Tabasco if desired, then chill sauce.
- Serve cold shrimp with cocktail sauce.
