Strawberry marshmallows

Ingredients
- 3/4 cup strawberry syrup
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 1/2 tbsp gelatin
- 1/3 cup filtered water
- Arrowroot powder (for dusting)
- Coconut oil (for greasing, optional)
Directions
- In a bowl, whisk strawberry syrup, vanilla extract, and salt until combined.
- In a pot, bloom gelatin in 1/3 cup filtered water for 5 minutes.
- Heat gelatin on low, stirring until smooth and fully dissolved.
- Add gelatin to the strawberry mixture and whisk with an electric hand mixer for 5-8 minutes, until it holds a soft peak.
- Pour into a coconut oil-greased glass dish and let cool for 3 hours.
- Cut into squares, roll in arrowroot powder, and enjoy.
