Strawberry mousse

Ingredients
- 250 g fresh strawberries, halved if large
- 25 g sugar
- 140 g mini marshmallows, cut if you have big ones
- 200 ml double cream
Directions
- Place all but 2 strawberries in a pan with 100 ml water and 25 g caster sugar.
- Cook over medium heat until strawberries are soft enough to mash, about 3 minutes.
- Remove from heat, mash berries with a fork until pulpy, then stir in 140 g mini marshmallows until dissolved. Let cool.
- Whip 200 ml double cream until it holds its shape.
- Fold whipped cream into the cooled strawberry mixture, then spoon into one bowl or separate pots.
- Chill for about 2 hours, or until set.
- Decorate with the reserved 2 strawberries, halved.
