Strawberry mousse

  1. Place all but 2 strawberries in a pan with 100 ml water and 25 g caster sugar.
  2. Cook over medium heat until strawberries are soft enough to mash, about 3 minutes.
  3. Remove from heat, mash berries with a fork until pulpy, then stir in 140 g mini marshmallows until dissolved. Let cool.
  4. Whip 200 ml double cream until it holds its shape.
  5. Fold whipped cream into the cooled strawberry mixture, then spoon into one bowl or separate pots.
  6. Chill for about 2 hours, or until set.
  7. Decorate with the reserved 2 strawberries, halved.
