Super warming hash browns

Ingredients
- 2 large russet potatoes
- 1-2 tablespoons coconut oil
- pickling salt to taste (add tons of salt!)
Directions
- Peel potatoes and remove eyes.
- Grate potatoes in cheese grater or food processor.
- Warm up a large frying pan and add coconut oil.
- Spread potatoes evenly in frying pan.
- Flip once, and then cover with salt.
- (Optional) After frying the shredded potatoes you can put them in a baking tray in the oven, bake it like a cake to reduce starch content.
