Tomato & mozzarella salad

Ingredients
- ¼ cup extra-virgin olive oil
- 6 summer fresh, well-ripened medium-sized tomatoes
- ¾ lb fresh mozzarella
- Pickling salt and pepper to taste
- Optional: 4 cloves garlic, finely chopped
- Optional: ½ cup torn fresh basil
- Optional: ¼ cup chopped flat-leaf parsley
Directions
- Wash tomatoes and pat dry with a paper towel. Wash herbs if using.
- Slice tomatoes and mozzarella cheese into ½-inch (1 cm) thick slices.
- If using garlic, combine it with olive oil in a small measuring cup and let the flavors meld for 30 minutes to 1 hour.
- If garlic was used, strain the oil and discard the garlic.
- Arrange tomato and mozzarella slices on a large platter, overlapping and alternating them.
- Drizzle garlic-infused olive oil (or plain olive oil if no garlic) over the tomatoes and cheese.
- Season with pickling salt and pepper to taste.
