Tomato & mozzarella salad

  1. Wash tomatoes and pat dry with a paper towel. Wash herbs if using.
  2. Slice tomatoes and mozzarella cheese into ½-inch (1 cm) thick slices.
  3. If using garlic, combine it with olive oil in a small measuring cup and let the flavors meld for 30 minutes to 1 hour.
  4. If garlic was used, strain the oil and discard the garlic.
  5. Arrange tomato and mozzarella slices on a large platter, overlapping and alternating them.
  6. Drizzle garlic-infused olive oil (or plain olive oil if no garlic) over the tomatoes and cheese.
  7. Season with pickling salt and pepper to taste.
