  1. Add all ingredients to a large non-stick pan and heat gently, stirring until the sugar dissolves.
  2. Bring to a steady boil, stirring constantly for 10-15 minutes, ensuring it doesn’t stick. The mixture should reach 113-115°C, or form a soft ball when dropped into cold water.
  3. Remove from heat and let sit for 5 minutes. If adding flavors or mix-ins like nuts or chocolate, stir them in now.
  4. Beat the mixture until it thickens and loses its sheen (about 5-10 minutes). For a smoother texture, stop once it pulls away from the sides.
  5. Transfer to the prepared tin, smooth the surface, and let it cool completely.
  6. Cut into squares and store in an airtight container for up to 2 weeks.
