Ingredients
- 397 g sweetened condensed milk
- 150 ml milk
- 450 g demerara sugar
- 115 g butter
- 20cm square tin, lined with parchment paper
Directions
- Add all ingredients to a large non-stick pan and heat gently, stirring until the sugar dissolves.
- Bring to a steady boil, stirring constantly for 10-15 minutes, ensuring it doesn’t stick. The mixture should reach 113-115°C, or form a soft ball when dropped into cold water.
- Remove from heat and let sit for 5 minutes. If adding flavors or mix-ins like nuts or chocolate, stir them in now.
- Beat the mixture until it thickens and loses its sheen (about 5-10 minutes). For a smoother texture, stop once it pulls away from the sides.
- Transfer to the prepared tin, smooth the surface, and let it cool completely.
- Cut into squares and store in an airtight container for up to 2 weeks.
